Around the end of August… Just before harvest.

Where and how would we do our first experiment with  natural wine in amphoras, was really a  challenge for us. For one thng we  don’t have the  building yet, so we decided to allow our imagination to  do the work.

We acquired a 20’ container , dug  the grown deep enough to contain it and  covered with soil as insulation. In doing so, this is the ideal way to ensure the required constant cellar low temperature.  Once this was  done, the next move is to get the amphoras in the container.
